Longing for the weekend

On my lunch break today I’m sitting thinking about the past two weekends and how I spent them. I hope this weekend not only do I get in some great training, but I get to partake in some fall festivites that the Hudson Valley has to offer.

Besides training, I finally got to ride my mountain bike at Lake Minnewaska State Park Perserve. I talked my best friend into coming along with me, and at first she was hesitant, but after my re-assurance that I wouldn’t “trail-blaze” her she was ready to ride. We went around Lake Awosting, and climbed up to Castle Point. From there it was a nice relaxing downhill all the way back to Lake Minnewaska. The ride in total was around 13 miles, and was a great way to spend a “lazy” Sunday afternoon.
Taking in all of the fall foliage certainly works up an appetite! Often I find myself at my best friend Tara B.’s house. Her and her family enjoy living a healthy and active lifestyle, so I find myself cooking dinner with them numerous nights of the week. One nice we took a shot at making Indian food. IT WAS AMAZING! We seasoned tofu, red pepper, zuccini, and chick peas and served over brown rice.
My hopes for this weekend are as follows:
- Obiously train
- Pick a pumpkin – if I’m feeling frisky maybe I will even carve it!
- Make my own applesauce
- Mountain Bike around Lake Minnewaska – of course, weather permitting
